Miniature Pecan Pie

If you are like me and love Pecan Pie, you will LOVE this! I make my recipe as two smaller pies (5 1/2") instead of a large one! I know it's just a small thing, but it's fun and it's different. To me, this pie is better enjoyed as a smaller slice, leaving room for pumpkin and mincemeat on the side!

Red Velvet Cookies


These luscious Red Velvet Cookies are inspired by a classic red velvet cake. What makes these unique is the cream cheese is mixed into the dough! Not a frosting and not a filling. Doing this creates a soft, chewy cookie that will surprise you. The recipe says to chill the dough, but I keep my home pretty cool, so I've done them with a pretty short chill time and they work just fine.

German Potato Salad - Hold The Mayo!


Quick and delicious,  the added zing of a tangy bacon,  vinegar and mustard dressing,  changes everything! This German Potato Salad is usually served warm (but you can serve it old)) and is sure to please everyone! Cook right alongside The Happiest Cook with her step-by-step instructions. TIP:  Heat your leftover salad in a skillet with a shake of olive oil. The bacon will crisp right up and it is fabulous!

Mexican Chipotle Meatballs
