These delicious Fish Cakes are easy to prepare, freeze great and are good for snacking! They're also a nice change from plain 'ole pan-fried fish. I grew up on these. My papa would fish almost every weekend. We had fried fish, then any leftovers were turned into fish cakes. It didn't matter what kind of fish. My fondest memory is eating them right out of the pan. It didn't matter how hot they were! Mmm... mmm... good!
In this particular recipe, we used: Salmon fillets and Albacore Tuna.
Add a side of Sweet Potato fries and a Cucumber salad and you have a nutritious and delicious meal!
