Jalapeño Cornbread

Growing up with a grandma who loves to cook makes for very happy grandchildren! Living on the Gulf coast of Florida, cornbread was a side dish my Grandma served often - hot with honey & butter. As an adult, we now spice it up with Jalapeño's and sharp cheese. It's the best ever, still served often as it goes with anything. Enjoy!




Blackberry & Jalapeño Thumbprint Cookies


I cook a lot of different things, bake a lot of different things. But, one of my all-time favorite things are cookies!!! There so small yet so packed with flavor. My Pop loves cookies. These are one of his favorites, because not only are they a cookie, they incorporate Blackberries and Jalapeños, also high up on his list of favorites! So whatever your favorite jams (jelly doesn't work as good), enjoy!

Lemon Halibut & Asparagus

I was lucky to have lived in so many places that were abundant with seafood! From fishing off the pier in Pensacola, FL, deep sea fishing for whatever we could get of the Oregon coast to fishing hip to hip on an ice cold river in Alaska for Salmon. I do love fishing and I enjoy eating all kinds of seafood.


I hope you enjoy this favorite one pan meal of Halibut and Asparagus with the yummy tang of lemon and a touch of crispy bacon bits. Don't you wish we had smellivision!?




Fish Cakes



These delicious Fish Cakes are easy to prepare, freeze great and are good for snacking! They're also a nice change from plain 'ole pan-fried fish. I grew up on these. My papa would fish almost every weekend. We had fried fish, then any leftovers were turned into fish cakes. It didn't matter what kind of fish. My fondest memory is eating them right out of the pan. It didn't matter how hot they were! Mmm... mmm... good! 

In this particular recipe, we used: Salmon fillets and Albacore Tuna. Add a side of Sweet Potato fries and a Cucumber salad and you have a nutritious and delicious meal!

Cornish Hen - For Two




Guess what holiday is right around the corner?! It’s Valentines Day! Today we are going to prepare a meal that is impressive and delicious and best of all? Easy to prepare. And don’t hide it away just for Valentines, it’s a great dish for serving up any day! I’m going to be cooking Cornish Game Hens with potatoes and peppers. So put on some soft music, light some candles and open that special bottle of wine you’ve been saving. And like I always say, let’s get cooking!

Portuguese Bean & Smoked Turkey Soup

Hawaii's version of comfort food! It's not a Hawaiian dish, but gained popularity being served at the Punahou Carnival held annually on the Punahou Campus in Hawaii, dating back to 1932, when students hosted the Oahuan Campus Carnival to fundraise for the yearbook. Living in Virginia, Portuguese Sausage isn't something you just run to Walmart for! The Smoked Turkey is a great healthy option adding amazing flavor. Onolicious!

Crispy Fish Almandine




This dish looks impressive and tastes delicious served over couscous or rice! Just lay your fish over couscous, then place fish on top and spoon on sauce. Garnish with lemon wedges. Your favorite green vegetable completes your meal! Enjoy!








Porcupine Meatballs



I am tripping down
memory lane. Do you remember making Mac and Cheese for your kids? Hotdogs stuffed with potatoes and melted cheese on top? Spaghetti? The stories I could tell!  Well, today we are making Porcupine Meatballs. I learned to make these from a friend of mine, Marcia.  She had twin girls.  When they were 3 or four yrs old, I remember her telling me about this meal she would make that her girls just loved! I just had to learn to make them. They go with just about anything, from noodles to potatoes or by themselves! You see, they aren’t just for children!




Chocolate Overload


My mom's birthday cake is everyone's favorite chocolate fix, on my mom's china and her special flatware! Make it anytime!
