Double Stuffed Chicken & Jalapeno Enchiladas

 


Today we are talking cooking for company, friends, or family gatherings. I love it when friends or family drop by.  My sister, who still lives in Florida, would work long hours (and still does!) and sometimes just skip eating altogether!  I got into the habit of making and freezing these individually just for her. Hen when she stopped by, I could grab one of these from the freezer, pop in the microwave for a healthy snack! These Double Stuffed Chicken & Jalapeno Enchiladas are a bit messy to make but freeze so well. You can freeze them individually in freezer bags or in a baking dish ready to reheat for your family dinner. Add a bright green salad with chips and salsa and its dinner time!

Sweet Potato Fries

 

Sweet Potato fries are a super alternative to regular french fries. They are an excellent source of beta-carotene, full of antioxidants and fiber, vitamin C, manganese, copper, pantothenic acid and vitamin B6. They are salty-sweet, crunchy, and spicy if you wish. Everyone can individualize them according to what they like, since spices are added after cooking.

They are a great snack and so easy to prepare.  If you've never tried making them, pick up a potato or two and give it a try!  You won't be disappointed.

Cast Iron Rancher’s Pie


Comfort Food – we all love it. It’s so fun putting on an old movie you know all the words to, the music you know by heart, gathering up all the ingredients and cooking up a stew or casserole on a day where maybe the weather isn’t all that great! Today we are making a variation of an old favorite. Today we are making Cast Iron Rancher’s Pie. For those of you watching your carbs, the biscuits we are mixing up are carb friendly, made with Almond flour. Just wait until you taste them!
